About the role
Executive Chef – High-Volume Catering & Events - Cape Town
R40,000 – R45,000 per month | NEGOTIABLE
Essential: Candidates must come from a large-scale catering background. We are specifically looking for an Executive Chef or strong Head Chef with solid HOT KITCHEN experience in high-volume catering, banqueting, stadium hospitality or large-scale events.
We are recruiting an experienced Executive Chef to head up the culinary operation for a busy Cape Town catering and events business.
This is not a traditional hotel Executive Chef position. The operation handles a combination of daily catering orders and large sporting functions, with production on major event days reaching up to 800 meal packs. Each function is different, so the kitchen is constantly working with new menus, different service requirements and changing production volumes.
For that reason, we need someone who is both operationally strong and genuinely creative. You should enjoy developing menus rather than simply repeating the same offering week after week. Previous development chef experience would be a strong advantage.
What we are looking for
- You need to be very comfortable in the hot kitchen and have the experience to manage high-volume production without compromising food quality, consistency or presentation.
- Strong kitchen systems and reporting are equally important. This role requires someone who understands production planning, recipe standardisation, menu costing, stock control, wastage, portion control, food cost and kitchen administration. You need to be able to put systems in place, make sure they are followed and know your numbers.
- You will take responsibility for menu development and costing, production planning, quality control, stock and ordering, food safety, kitchen standards and the overall culinary delivery of functions.
- Because much of the business is events-driven, you’ll work closely with the operational team to plan upcoming functions, sporting fixtures and daily orders, making sure the kitchen is properly prepared and that food leaves the production kitchen on time and to the correct standard.
- The kitchen operates as a Halaal kitchen. Previous Halaal kitchen experience is not essential, as the procedures and requirements can be taught.
- We are looking for someone with strong high-volume experience who can think ahead, stay calm when production ramps up and still care about what actually goes onto the plate.
Working hours
The company aims for a five-day working week where operationally possible, but this is not a Monday-to-Friday position.
A large proportion of the functions are sporting events, which means weekend work forms part of the role, along with occasional evenings, match days and public holidays. During particularly busy periods or major events, there may also be an occasional six-day week.
You therefore need to be comfortable working around the requirements of the events calendar rather than fixed office hours.
What they're looking for
Experience
- Ideally, you will have a formal culinary qualification and substantial professional kitchen experience, including several years at Executive Chef or Head Chef level within a large-scale catering operation.
- Experience within high-volume catering, banqueting, events or stadium hospitality is particularly relevant, together with solid experience in menu development, recipe costing, food cost management, stock control and kitchen systems.
- You should also be confident using kitchen reporting systems, Excel and stock or POS systems.
Salary: R40,000 – R45,000 per month | NEGOTIABLE
This is a strong opportunity for a chef who enjoys the scale and pace of events, but still wants room to be creative and develop food rather than simply manage an existing menu.
If you have not heard back from us within the next two weeks, please consider your application as unsuccessful on this particular occasion.
